Refrigerate the mixture for 20 minutes, until it firms up.
Scoop tablespoon portions onto the lined tray.
Freeze the portions for 1 to 2 hours, until very firm.
Melt the chocolate chips with coconut oil in short microwave bursts.
Dip each frozen bite into the melted chocolate.
Return each coated bite to the tray right away.
Add flaky salt or crushed peanuts before the chocolate sets.
Freeze for 10 more minutes, then serve or store.
