Gingerbread Cake

This gingerbread cake comes out soft, plush, and full of warm spice. It’s an easy, comforting bake that feels nostalgic without requiring any complicated steps.

Ingredients
  

  • 2 ½ cups all-purpose flour
  • 1 cup dark brown sugar packed
  • 1 cup molasses
  • 1 cup hot water
  • ¾ cup unsalted butter melted
  • 2 large eggs
  • 2 teaspoons ground ginger
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground cloves
  • 1 ½ teaspoons baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat your oven to 350°F.
  2. Grease a 9x13-inch baking pan.
  3. Combine the flour, ginger, cinnamon, cloves, baking soda, baking powder, and salt in a bowl.
  4. Whisk the brown sugar and melted butter together in a separate bowl.
  5. Add the eggs and whisk until the mixture looks smooth.
  6. Add the molasses and vanilla and whisk until fully combined.
  7. Pour the hot water into the wet mixture and whisk gently.
  8. Add the dry ingredients to the wet ingredients and stir until the batter is fully mixed.
  9. Pour the batter into the prepared pan.
  10. Bake for 35–40 minutes, or until the center springs back lightly when touched.
  11. Cool the cake in the pan for at least 20 minutes.
  12. Slice and serve warm or cooled.
