Mexican Street Corn

Mexican street corn delivers smoky charred kernels coated in a creamy, tangy sauce with chili, lime, and cotija. It makes an easy summer side that feels fun, flavorful, and impossible to resist.

Ingredients
  

  • 4 ears of fresh corn husks removed
  • 2 tablespoons olive oil
  • 1/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1 cup crumbled cotija cheese
  • 1/4 cup chopped fresh cilantro
  • 1 lime cut into wedges

Method
 

  1. Brush the corn with olive oil.
  2. Heat a grill to medium-high.
  3. Place the corn directly on the grates.
  4. Turn the corn every 2 to 3 minutes until charred, about 10 minutes total.
  5. Remove the corn from the grill and let it cool slightly.
  6. Stir together the mayonnaise, sour cream, chili powder, smoked paprika, garlic powder, and salt in a small bowl.
  7. Spread the sauce evenly over the warm corn.
  8. Sprinkle the corn with cotija cheese and cilantro.
  9. Serve with lime wedges.
  10. Taste and add extra salt if needed.
