Patriotic Pinwheels

These patriotic pinwheels are creamy, crunchy, and easy to make ahead for a crowd. The red bell pepper and blue corn chips give each tortilla spiral a fun red, white, and blue look.

Ingredients
  

  • 6 large flour tortillas
  • 8 ounces cream cheese softened
  • 1 cup shredded cheddar cheese
  • 1 red bell pepper finely diced
  • 1/2 cup blue corn tortilla chips crushed

Method
 

  1. Mix the softened cream cheese and shredded cheddar cheese until smooth.
  2. Stir in the finely diced red bell pepper and crushed blue corn tortilla chips.
  3. Spread the mixture evenly over the flour tortillas.
  4. Roll each tortilla tightly.
  5. Wrap each rolled tortilla in plastic wrap.
  6. Chill the wrapped tortillas for at least 1 hour.
  7. Slice the chilled tortillas into pinwheels.
  8. Serve.
