Asian Garlic Noodles

These Asian garlic noodles are glossy, buttery, savory, and loaded with warm garlic flavor. They come together fast with simple pantry ingredients and a silky golden-brown sauce that clings to every noodle.

Ingredients
  

  • 8 ounces spaghetti linguine, or lo mein noodles
  • 4 tablespoons unsalted butter
  • 6 garlic cloves finely minced
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 2 teaspoons brown sugar
  • 2 teaspoons toasted sesame oil
  • 1 teaspoon fish sauce optional
  • 1/4 teaspoon black pepper
  • 1/3 cup grated Parmesan cheese
  • 2 tablespoons sliced green onions
  • 1 tablespoon chopped cilantro optional
  • Red pepper flakes optional
  • 1/4 cup reserved noodle water as needed

Method
 

  1. Bring a large pot of salted water to a boil.
  2. Cook 8 ounces of noodles until tender, using package directions.
  3. Reserve 1/4 cup noodle water, then drain the noodles.
  4. Stir soy sauce, oyster sauce, brown sugar, sesame oil, fish sauce, and pepper together.
  5. Melt 4 tablespoons butter in a large skillet over medium-low heat.
  6. Add minced garlic and cook for 1 to 2 minutes.
  7. Pour in the sauce mixture and let it bubble for 20 seconds.
  8. Add the drained noodles and toss well.
  9. Sprinkle in Parmesan and toss again.
  10. Add noodle water, one tablespoon at a time, until glossy.
  11. Finish with green onions, cilantro, and red pepper flakes, if wanted.
  12. Serve hot while the noodles still look shiny.
