Lemon Bars

These lemon bars have a buttery shortbread crust and a smooth, bright citrus filling. The texture is clean and set, with a light dusting of powdered sugar for a simple finish.

Ingredients
  

  • 1 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 6 large eggs
  • 1 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 to 3 tablespoons powdered sugar

Method
 

  1. Preheat the oven to 350°F.
  2. Line a 9x13-inch pan with parchment paper.
  3. Cream the butter and 1/2 cup granulated sugar until smooth.
  4. Mix in 2 cups all-purpose flour, salt, and vanilla extract until combined.
  5. Press the dough evenly into the prepared pan.
  6. Bake the crust for 18 to 22 minutes until lightly golden.
  7. Whisk together 2 cups granulated sugar and 1/4 cup all-purpose flour.
  8. Add the eggs and whisk until smooth.
  9. Stir in the lemon juice and lemon zest until fully combined.
  10. Pour the filling over the hot crust.
  11. Bake for 20 to 24 minutes until the center is set.
  12. Cool completely at room temperature.
  13. Chill for at least 2 hours before slicing.
  14. Dust with powdered sugar before serving.
